To prove that, in whatever there is passion and dedication, there is also love. And that, of course, the romantic character of our city is not betrayed by its pasha. On the contrary, the pasha is evidence of its romantic bond with the East, perhaps more specific and tangible than any other.

After all, I met many customers of pasha restaurants who were attached to their gastronomic preference with the unwavering dedication of a lover. So much so that they considered a warm "soup" dish at five in the morning a real romantic mystery...

From the first edition of this book in 1992 to the present new, updated, and improved edition, many years have passed.

Thessaloniki, as a living entity, has changed! Its geography and social map have changed. And, as expected, the map of its pasha restaurants has also changed.

There have been changes in the codes of gastronomy, the absence of iconic pasha restaurants, and the presence of new ones.

Therefore, the second edition of this book can also be considered as a new direction of the same work.
