Recipes for Easter cookies
The period before Easter may be considered fasting, but it has the strong smell and flavors of the dozens of delicacies we prepare for Easter day.
One of these is the delicious and fluffy Easter cookies. Who doesn't have childhood memories of their mom's and grandma's kitchen shaping and baking the most delicious cookies? Cookies that were not allowed to be eaten at that moment. And that's what made them even tastier on Easter Sunday.

Classic Easter Cookies
Ingredients:
For the dough
- 300 gr. butter
- 250 gr. granulated sugar
- 2 gr. mastic, optional
- 7 gr. mahleb, optional
- 200 gr. orange juice
- 1 tbsp. brandy
- 1 tsp. vanilla extract
- 2 egg yolks
- zest of 2 oranges
- 100 gr. whole milk
- 900 gr. all-purpose flour
- 1 pinch of salt
- 1 tsp. baking powder
- 1 tsp. baking soda
For the glaze
- 1 egg yolk, diluted with 1 tbsp. water

Ingredients:
For the dough
- 250 gr. butter
- 2 pinches of salt
- 60 gr. orange juice (1 large orange)
- 450 gr. all-purpose flour
- 140 gr. sugar
- zest from 1 large unwaxed orange
- 1/8 tsp baking soda
- 1 tsp baking powder
- 2 egg yolks
- 15 ml cognac
- 2 tears of mastic
For the glaze
- 1 small egg
- 1 tbsp water

Ammonia Cookies
Ingredients:
For the dough
- 1250 gr. flour
- 500 gr. butter
- 500 gr. powdered sugar
- 5 eggs
- 125 gr. milk
- 3 vanilla extracts
- 2 tsp baking powder
- 1/2 tsp ammonia
For the glaze
- 2 egg yolks
- 5 tbsp water
- 1 tbsp sugar
Execution:
- With a sieve, sift the flour with the baking powder.
- In the bowl of the mixer, beat the butter with the sugar for 4 minutes on high speed, until creamy.
- Add the eggs one by one to the mixture.
- Add the vanilla and gradually add the milk and ammonia.
- Finally, add the flour and once the dough comes together in a ball, start shaping round cookies.
- Place them on baking trays lined with parchment paper.
- Put the ingredients for the egg wash in a bowl and mix with a fork.
- Brush twice with the egg wash.
- Bake well in a preheated oven at 160 to 170°C in a convection setting for about 25 minutes, until golden brown.
