Description

Fillet Knife

The fillet knife is designed to offer precision and ease of use. The long, thin blade of the knife is extremely flexible to cut through meat or fish without resistance and help you easily and quickly prepare fish fillets in seconds. Ideal for cutting fish such as salmon, swordfish, trout, as well as any type of meat.

Blade Material

The blade of the knife is forged from a single piece of high carbon stainless steel. This sturdy steel resists stains and corrosion, ensures longevity, and provides precise cutting.

The hardness level of the blade is 58 (±1) HRC (a knife with a hardness above 56 HRC is considered good).

Handle

The handle is made of solid smoked oak, which makes it water-resistant and gives it a durable character.

It features the Wüsthof logo and is secured with three brass rivets. The handguard at the end of the handle is shaped to ensure that the knife is always held securely. The bolster protects the fingers, while the balance allows for flexibility and facilitates precise work. The slim shape of the blade reduces its weight and allows for more efficient work.

Cutting Surface

Cuts are recommended to be made on wooden or plastic cutting surfaces. Glass, stone, and marble cutting surfaces are unsuitable as they can cause permanent damage to the knife blades.

Cleaning

Wash the knife with warm water before using it for the first time. After each use, make sure to wash the knife immediately (with a mild detergent) and dry it with a soft cloth. Especially if you have cut acidic foods, you should wash the knife immediately after use.

For your own safety, you should always wipe the knife away from your body and away from its edge, using a cloth or towel.

It is not recommended to wash it in the dishwasher but by hand, in order to protect its material and maintain its sharpness for a long time.

Sharpening

No matter how sharp a knife is at first, after some use it needs sharpening, something you can achieve with a sharpener, sharpening stone, or strop.

You can tell if your knife cuts well with an easy test using the knife and a piece of paper. A sharp knife can easily and cleanly cut through a piece of paper. On the other hand, a knife that needs sharpening will struggle and its cutting will be dull.

It is also advisable to sharpen your knives with a professional occasionally, to fix any damage to the blade's edge and to maintain sharpness.

This review is about type: Chef, dimension: 16 cm

I have been cooking as a hobby for the past few years. I used cheap knives mainly to learn how to sharpen properly without damaging the knife. I bought the crafter with the 16cm blade because it is the ideal size for me. I control it better as an extension of my hand. It is lightweight and the handle allows for a good grip. It is beautiful, reminiscent of our grandparents' knives, and I foresee having it until my old age. It cuts like a razor, so it requires caution for someone who is not familiar. For household and amateur use, it is perfect and even more. I tried it on vegetables and meat. I felt like I leveled up.
