Stuffed mushrooms with light cheese and arugula
Do you want something quick with few ingredients? We have a suggestion for a light and tasty dinner with few calories! It combines all food groups and we are sure it will become one of your favorites!
As a base for this specific dinner, we chose mushrooms, which are considered excellent food as they contain negligible amounts of fat and sugar, but significant amounts of dietary fiber. The proteins in mushrooms, due to the presence of all essential amino acids, are of high biological value and compete with animal proteins.
Note down the ingredients you will need:
- 3 large white mushrooms
- 60g light cheese (low in fat)
- 1 pinch freshly ground black pepper
- 1 small handful of arugula
- 10 cherry tomatoes
See the process to make it:
- Clean the mushrooms
- Fill each mushroom with 20g grated cheese
- Bake in a preheated oven at 180°C for 10 minutes.
- Sprinkle with freshly ground pepper on top and place the arugula and cherry tomatoes
This recipe is vegetarian, so it is the perfect choice for after the holidays when we have consumed a lot of meat.
