Recipe for healthy pancakes!
When we are on a diet program, we fear the thought of enjoying our favorite sweets... Should we reconsider it? Diet does not mean deprivation! And yes, it is possible to enjoy our favorite pancakes, with easy adjustments, without deviating from our diet plan.
Nutritious and rich in protein, they will definitely become your favorite breakfast!
Ingredients
- 100 gr. oats
- 120 gr. banana, mashed
- 120 gr. Greek yogurt
- 1 medium egg
- 40 gr. honey
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
- 3 tsp olive oil, for the pan
For serving
- banana, sliced
- blueberries
- honey
Instructions
- Put the oats in a blender and blend until completely dissolved and turned into flour.
- Add the banana, yogurt, egg, honey, cinnamon, vanilla extract, and baking powder, and blend until homogeneous.
- Place a non-stick pan over medium heat and let it warm up.
- Pour 1 tsp olive oil and add 3 full tablespoons of the mixture, leaving space between them as they will spread while cooking.
- Check their edges and when the pancakes caramelize on one side (you will notice it when they detach from the bottom of the pan), flip them over using a spatula. Cook for 2-3 minutes on each side.
- Transfer the cooked pancakes to a plate.
- Wipe the pan with kitchen paper to prevent the next batch of pancakes from burning.
- Pour 1 tsp olive oil into the pan and repeat the same process until the mixture is finished.
- Place one pancake on top of the other, serve with banana slices and blueberries, and drizzle with honey.
Of course, you can add whatever else you like! This is our favorite way to enjoy them!
