If you pay attention to your diet or generally want to eat healthy, we have the perfect suggestion for a healthy but delicious dish of noodles with chicken and vegetables.
Note the ingredients you will need:
- 250g rice noodles
- 250g chicken breast or thigh fillet
- 4 tbsp olive oil
- 1/2 onion
- 1 carrot
- 1/2 broccoli
- some onion (both fresh and dried)
- 6 tbsp soy sauce
- Salt pepper
See the process to make it:
- In a pot of boiling water, add the rice noodles and turn off the heat. Cover with a lid and let them soften according to the package instructions.
- Place a pan over high heat.
- Cut the chicken into thin strips.
- Add the chicken to the hot pan and sauté for 1-2 minutes until it takes on color with 1 tbsp olive oil.
- Remove the chicken from the pan once it has taken on color.
- Cut the onion into thin slices and add it to the pan with 1 tbsp olive oil.
- Similarly, do the same for the carrot and broccoli.
- Add the chicken back to the pan and also add some fresh onion.
- Season with salt, pepper, and if desired, a little garlic powder.
- Pour in the soy sauce and mix well.
- Finally, transfer the noodles to the pan and mix all the ingredients together.
- Serve with some freshly chopped onion.
It is a perfect and nutritious dish to enjoy either alone or with your friends.
